Default A/P via apprenticeship?

Hey, Im working at a FBO and helping on the maintenance side when Im not flying, the A&P there said to count my hours I worked cause then after so many hours he will sign me off so I can take the test.

my questions are:

how many hours do I need?
any other requirements?
Once I take the written test, Am I an A/P?
What if I do so many hours, and quit this job, does these hours count if I decide to take it up again with another company? or do I have to start all over again?

There are three written tests: General, Airframe, Powerplant. After you take the writtens, you have to take an oral and practical test with an examiner. He will issue you the certificate.
