I am just curious as to what needs to be put into the MX logbooks after a tail number has been changed on an aircraft. Is it basically an entry that says the tail number was changed to 'this' on this date?

Date, description of work done, printed and signed name of the person doing the work, and their certificate number(with type of cert held). Also probably wouldn't hurt to put the total time in there too.

The aircraft serial number will be in all it's logbooks, and will never change. It's like your car, the License plate # can change several times, but the VIN will always be there.

Yes, but if you change the N #(which can be changed), then you still need to put a logbook entry in of when that work was performed as it is a minor alteration. Whether or not all mechanics do it or not is another matter, but legally just changing the number in the book is not enough, the actual work(painting, adhereing adhesive, etc) must still be logged.
