I know CFI's are hard to find, but I guess it couldn't hurt to post here anyway. My flight school in southeastern Washington state is looking for CFI's right now, and I'm sorry I really don't have details, but we're desperate enough I'm sure you'd be able to negotiate well. It's got its ups and downs like anywhere else, but as long as you know what you're getting in to, it could be ok. I spent a year and a half as an instructor there. Mostly good memories with a few very annoying parts. PM me if you want my opinion of the place, although I'm slightly outdated. Haven't worked there in a year and a half, and haven't even hung out there in six months, although I've still got many friends there.
