Default Plane Transition

If you have only trained in a C-172 how difficult would it be to transition to a Piper Dakota?

Not bad. Different site picture for landing, more power, and different V-speeds. I did it in about 4 hours of instruction (Turbo Dakota).

Not hard at all... a Dakota is a high perfomance so you'd need a high performance endorsement. I'd say an hour or two with an instructor to do the H.P and to get you familiar with low wing peculiarities.
