Default Logging PIC

I understand that this has probably been brought up before, and I don't want to dig up old graves, however, I'm still unsure about how to accurately log PIC time...

Assume you have a PPL and are engaging in your IR training in actual IMC, are you legally allowed to log PIC time as the 'sole manipulator of the controls' even though you are not legal to fly in IMC? Or, for example, you are receiving your commercial training in a complex aircraft, however, you do not have the requisite endorsement, can you log PIC as the 'sole manipulator'?

Also, what happens if your instructor takes the controls to demonstrate a maneuver, for example, would you log then subtract the time the instructor was at the wheel from the total time to get your PIC?

if you're with an instructor yo can log actual time as PIC.

If the instructor is demonstrating something just log the time, it's splittinng small hairs

"Logging" PIC and "Acting as" PIC are two different things.

§ 61.51 Pilot logbooks
(e) Logging pilot-in-command flight time. (1) A sport, recreational, private, or commercial pilot may log pilot-in-command time only for that flight time during which that person—
(i) Is the sole manipulator of the controls of an aircraft for which the pilot is rated or has privileges;
(ii) Is the sole occupant of the aircraft; or
(iii) Except for a recreational pilot, is acting as pilot in command of an aircraft on which more than one pilot is required under the type certification of the aircraft or the regulations under which the flight is conducted.

You may not "act as" PIC in IMC without an instrument rating, nor may you "act as" PIC in a complex airplane without the proper endorsements. You may "log" PIC as dictated in 61.51.
