If I were you I would apply to that Chinese flight instructing position in China, work there 1-2 years and then be a FO for their CRJs and work contract for a few years. Then when you've come back to the states not only has it been like 6-7 years since your DUI but you have previous 121 experience without getting sloshed on the job.
