Yeah the sim can be pitch sensative.

They are looking to see if you have a scan. Best advice is not to get behind the sim. Correct it, but dont overcorrect it or you will lose a thousand feet of altitude.

To practice I would fly the MSFS sim using the learjet with the sim gouge. Also look for cockpit shots of the 1900D on airliners.net to see the cockpit before you climb into it.
