A person is not dead until someone qualified to pronounce them dead says so. I (a F/A) am not a said qualified individual. A passenger may be unconscious, unresponsive, have a lack of detectable breath, and/or a lack of detectable pulse, but until a MD or a coroner says they're dead, they're not officially dead.
As for letting someone touch the outside of the plane, I'd try my best to accomodate them.
