Famous Utah dish, called funeral potatoes because when the LDS church takes care of a funeral for someone it just became pretty common that the members would bring huge potato casseroles, along w/ ham, salad, rolls, etc. It's basically shredded or chopped potatoes w/ cream of chicken soup, or cream of mushroom, some onions, S&P. PUt that in the casserole, cover it with a couple cups of shredded cheddar, and top with a crunchy, then bake till it's golden brown and bubbly. The crunchy is usually corn flakes, ritz crackers, or bread crumbs.
